Great recipe for summer!

Our sewing group of five meet once a month.  Each one has to take a turn and provide lunch.  My husband calls us "The Gadabouts" because one lives in Germantown, TN, one in Mumford, TN, one in Trenton, TN, one in Greenfield, TN, and me in McKenzie, TN.  Darlene was the host last month and served this delicious -- did I say DELICIOUS!!! -- dessert.  I have made it twice and it is a 5 star for my husband and grandson, so thought I would share the recipe for you to enjoy during this hot summer.
Strawberry Whipped Sensation
4 cups fresh strawberries, divided (I used frozen strawberries since they are no longer in season)
1 can (14 oz) Eagle Brand sweetened condensed milk
1/4 cup lemon juice
1 8 oz tub Cool Whip, thawed, divided
8 Oreo chocolate sandwich cookies, finely chopped
1 tablespoon butter, melted

Line 8 x 4 inch loaf pan with foil.  Mash 2 cups of strawberries in large bowl (I used my food chopper).  Stir in condensed milk, juice and 2 cups of Cool Whip.  Pour into pan.
Top with chopped cookies mixed with the butter.  Press into mixture. 
FREEZE at least 6 hours.  To seerve, invert onto plate.  Remove foil.  Frost with remaining Cool Whip.  Top with remaining strawberries.

I am thinking about trying it with raspberries instead of strawberries.  Doesn't that sound good!!
